Mexico is truly a hotel-fiend's dream destination - only Morocco could rival it. My latest obsession is Carlos Couturier’s La Purificadora, a former 19th-century water-purifying centre next to the Iglesia de San Francisco in the colonial city of Puebla. The concept of purity inspired the hotel's back-to-basics concept, with a palette limited to black and white and materials such as stone from the original building, old wood and onyx. Archaeological finds, such as bottles and glass fragments, have also been incorporated into the design. The hotel does not lack for luxury, however, with restaurant, library, wine cellar and one of the most spectacular pools I've seen in a long time.
